Cucumber or sweet pepper
Tomatoes, plum-style or Campari best
One can tuna with oil (works best) OR 6 oz. tofu
Equal parts lime juice, soy sauce and maple syrup or agave nectar (Believe it or not...)
First wash the greens and tomatoes.
Add a dash of soy sauce or lime juice to your protein and FRY IT while you cut tomatoes.
Now FRY the tomatoes while you make the salad dressing.
Start dressing in a bowl or jar with lime juice and add equal amounts of the salt and sweet. For two people, I use 1/2 lime. Dressing will seem runny but will win raves!
Arrange the greens in shallow bowls or on plates. Add heated tuna or tofu and heated tomatoes. Add very thin slices of the cucumber and/or pepper.
Dress and serve.
It's easy to use 100% organic ingredients in this one if you wish!
1/2 C. cocoa powder
3/4 C. minus a tablespoon of cornstarch
Scant 3/4 C. cane sugar
Pinch of salt
Optional: 1/2 teaspoon instant coffee, or add 2 T. black coffee in place of some water
MIX the above in a medium saucepan with a whisk. Then add while whisking:
1 can coconut milk and 3/4 can water, or 3 C. non-dairy milk such as almond
At least 2 t. vanilla, up to 1 T.
Optional: 2 squares dark chocolate such as 70% or 85% in pieces, stirred in last
Cook over medium-low heat while stirring constantly until pudding is very thick. If lumpy, use a blender or eggbeater to restore smoothness. Pour into bowls while hot and let cool before serving. Makes four to six servings. Adapted from "Let's Do Organic" Cornstarch box.
